POKS Kosua Ne Meko (Egg & Pepper)

Eggs are a rich source of protein and can be cooked in many ways; boiling, frying, scrambling, poaching, etc. Typically, boiled eggs are sliced or diced into salads, or stuffed to make deviled eggs. At POKS Spices, our favorite way of snacking on or eating eggs comes from Ghana, West Africa. Ghanaians love to eat eggs, and will add boiled eggs to almost every meal as a protein source. A famous Ghanaian street snack is Kosua Ne Meko (Egg & Pepper), which the New York times dubs "an even better way to eat hard boiled eggs".

Kosua Ne Meko is the cousin of deviled eggs, with both dishes starting with hard boiled eggs. However, instead of removing the yolk to make stuffing for deviled eggs, the yolk is left in the egg with Kosua ne Meko. The sliced egg and yolk are stuffed with a red chili relish made from red chili, onion, salt and sometimes tomatoes to tone down the head. Finally, slivered onions are added for a crunchy bite. One bite of this snack is addictive, and will have you buying eggs by the dozen.

INGREDIENTS:

  • Boiled Eggs
  • Red Onion (Slivered)
  • 1/2 Tbsp - 1 Tbsp POKS Green West African Chili Sauce

RECIPE:

  • Slice the boiled egg through the yolk, into two.
  • Add POKS Green West African Chili Sauce to the egg.
  • Top with slivered onions and serve.
