POKS Smothered Chicken
Our recipe features crunchy chicken skin and smothered chicken, on a bed sautéed cremini mushroom seasoned with POKS Green Chili West African Seasoning, for bold West African flavors.
With each bite, you savor a delicate balance of fruity spicy heat juxtaposed to the umami flavors from sautéed mushrooms. For a complete meal, serve it with a side of roasted potatoes or over a bed of fluffy rice.
INGREDIENTS:
- 2 Chicken Thighs
- 3 - 4 Tbsp Flour
- Olive Oil
- 3 Tbsp Butter
- 8 oz Baby Bella Mushrooms (slices)
- 3 Cloves Garlic (pressed)
- 1/2 Cup Stock
- 1/2 Tbsp Dijon Mustard
- 1/4 Cup Heavy Cream
- 1 Tbsp Lemon Juice
- 1 - 2 Tbsp POKS Green Chili West African Seasoning
RECIPE:
- Season the chicken with POKS Seasoning, dredge in flour, add olive oil to a cast iron skillet and brown the chicken until cooked.
- Remove the chicken from the pan and add in the butter, mushrooms and garlic.
- Add in the lemon juice, mustard and stock and cook until it's reduced. Add in the cream to cook. Then, place the mushrooms and chicken back in the pan.
- Garnish and serve. Best over rice, mash/roasted potatoes or even noodles.
